Pineapple Tea
Did you know: Pineapples are especially rich in vitamin C and manganese, as well as numerous other vitamins & nutrients. They may aid in digestion, weight loss, and reduce stress. Pineapples contain bromelain, a group of enzymes that may aid in breaking down proteins & much more! Whether you eat it fresh, stir-fried, blended, or roasted this fantastic fruit works well in many dishes & hence why I wanted to try it as a tea. I have soaked other fruits in this manner in the past, with great results. Every 2.5 weeks, I make a batch of Pineapple Tea, which is a great way to use the skin and fruit flesh that is normally discarded.

1 Ripe Pineapple
2 Qts Filtered Water
Slice skin off pineapple & top, set aside.
Core the fruit, chop it into chunks (if possible).
Cut the softer fruit into bite size pieces and store for later use.
Discard the top part with leaves.
Add water to stock pot and pineapple skins & core.
Bring a pot of water to a rolling boil, then turn to low and simmer 20 to 30 minutes.
After 30 minutes, pull off heat to cool.
Strain through mesh strainer. If bits are noticeable, restrain through mesh strainer w/ coffee filter or other.
Pour Pineapple Tea in glass containers.
Enjoy Hot as is, add some honey and/or lemon or chill to serve cold.
