He put them together with fresh finds he picked up at local farmers markets and farm stands around the valley.<\/strong><\/span><\/p>\n<h3>Veggie Chicken Rice Soup<\/h3>\n<p><a href=\"https:\/\/i0.wp.com\/70q.ab7.mytemp.website\/wp-content\/uploads\/2017\/07\/farm-to-table.jpg\" data-rel=\"lightbox-image-1\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-38282 alignright\" src=\"https:\/\/i0.wp.com\/70q.ab7.mytemp.website\/wp-content\/uploads\/2017\/07\/farm-to-table-169x300.jpg?resize=169%2C300\" alt=\"\" width=\"169\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/thevalleyledger.com\/wp-content\/uploads\/2017\/07\/farm-to-table.jpg?resize=169%2C300&amp;ssl=1 169w, https:\/\/i0.wp.com\/thevalleyledger.com\/wp-content\/uploads\/2017\/07\/farm-to-table.jpg?w=281&amp;ssl=1 281w\" sizes=\"auto, (max-width: 169px) 100vw, 169px\" \/><\/a> 3 \u2013 4 qts chicken broth (homemade or carton)<br \/>\n1 \u2013 rotisserie chicken, skinned &amp; deboned, meat shredded<br \/>\n1 \u2013 head chard, leaves and stems roughly chopped<br \/>\n1 \u2013 head kale, leaves roughly chopped<br \/>\n3 medium carrots, skinned and finely chopped<br \/>\n3 ribs celery, cleaned and finely chopped<br \/>\n1 \u2013 med zucchini\/squash, finely chopped<br \/>\nHandful of scapes or scallions, finely minced<br \/>\n1 cup rice (any variety)<br \/>\n10 grinds fresh pepper<\/p>\n<p>Pour 3 qts chicken broth into large pot and bring to boil. Add remaining ingredients to pot, stir so items do not clump and lower heat to Low Setting, cover pot. Check and stir every 10 mins for doneness of rice. If soup becomes too thick, add more broth. Ladle into bowls and serve.<\/p>\n<h3>Strawberry-Rhubarb Sauce<\/h3>\n<p><a href=\"https:\/\/i0.wp.com\/70q.ab7.mytemp.website\/wp-content\/uploads\/2017\/07\/20170711_192414.jpg\" data-rel=\"lightbox-image-2\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-38285 aligncenter\" src=\"https:\/\/i0.wp.com\/70q.ab7.mytemp.website\/wp-content\/uploads\/2017\/07\/20170711_192414-300x169.jpg?resize=300%2C169\" alt=\"\" width=\"300\" height=\"169\" srcset=\"https:\/\/i0.wp.com\/thevalleyledger.com\/wp-content\/uploads\/2017\/07\/20170711_192414.jpg?resize=300%2C169&amp;ssl=1 300w, https:\/\/i0.wp.com\/thevalleyledger.com\/wp-content\/uploads\/2017\/07\/20170711_192414.jpg?w=550&amp;ssl=1 550w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1 Qt. Strawberries, rinsed and caps removed, quartered<br \/>\n1 # rhubarb stalks, rinsed, roughly chopped<br \/>\n2 fresh oranges, zest removed from 1 orange and minced, both oranges juiced, seeds removed<br \/>\n3 ozs spiced rum<br \/>\nRaw Honey<br \/>\nSugar (optional)<br \/>\nFresh Mint (optional) \u2013 2 Tablespoons<\/p>\n<p>Add all ingredients to medium stock pot and bring to boil, lower heat, stir and mash to break up berries and rhubarb stalks. Cook on low heat to evaporate liquids. Taste and adjust sweetest (if desired). Once to desired consistency, remove from heat and cool.
