Short on time, Christmas shopping/wrapping gifts and looking for quick lunch, something to nosh on, here are a few to try. Full of flavor & nutrition.

Avocado Toast w/ Bacon & Sprouts

Avocado, ripe, thinly sliced

2 slice bread, toasted

2 strips bacon, cooked, drained

Sprouts, choice

Salt & pepper

Softened butter

Avocado toast is quick and easy to throw together.

Toast bread, spread thin layer of butter, lay thin slices of avocado on warm toast.

Season with salt and pepper, top with bacon and sprouts.

Cut in half on diagonal and enjoy!

 

Chicken Salad w/ Tomato & Cucumber 

Homemade chicken salad or store bought

2 Plum Tomatoes, seeded, diced

Cucumbers, thinly sliced

Bread, Pita Bread or Cup (low carb)

I add diced tomatoes to pita bread, the more cuts in the tomato = releases more juices, when mixed with mayo in the chicken salad, it will break down and create a dressing of sorts.

 

Low Carb Beef & Cheese Wrap

Red or Green Tip Lettuce

Mayo or Mustard (or combo of both)

Horseradish

Thinly sliced roast beef

Provolone Cheese, choice

Scallion threads, optional

Add condiments to lettuce leaf, top with roast beef, cheese and roll up.

Tie off with a scallion thread to secure, grab and go!
